Thanksgiving


I am thankful that I live in a free country with a Democratic President, where health care reform is on the way, and where vampires and werewolves are drawing bigger crowds than Sarah Palin. I am especially grateful this Thanksgiving to be able to spend the holiday with family and friends. Our children and their spouses are traveling great distances to be with us, and several friends who live close by are sharing the cooking with me. I think Thanksgiving is my favorite holiday because it simply involves food and companionship and gratitude.

The photo is my Thanksgiving dinner centerpiece created from the bounty of Neil’s vegetable garden. He does grow great squash, and these are the smallest ones by far. Does anyone have any good recipes for butternut squash? I’d be grateful if you’d share them.

Beth,
Here's simple Butternut Squash recipe:

Peel and remove the seeds and pulp from the squash.
Slice into one inch slices.
Cover and bake at 350 for 25 minutes.
Drizzle half a cup of melted butter and half a cup of brown sugar on top.
Uncover nad bake 2o minutes longer or until squash is soft.

I go rave reviews for this SIMPLE preparation on Thanksgiving:

Peel 1 butternut squash and 1 small rutabaga. Add a small amount of water and a sprinkling of salt. Steam/boil until soft. Drain the liquid and mash, adding a little maple syrup.

Wow! A rutabaga sounds like something that a cartoon character would eat. But I love trying new foods, so rutabaga is on my grocery list for this week already. Thanks, Muffy.
